Adam Cawood Head Chef

Our Head Chef Adam Cawood moved to Edinburgh in 1996 from South Africa.  He began work in the Mussel Inn, Rose Street in 2001 where he started as a kitchen porter & at the same time attending Lauder College where he gained a HNC in Professional cookery. He  gradually worked his way to being Head Chef there.  After 2 years he left to work in the Marque Central Grindlay Street where he worked as Chef de Partie for a year.  Travelling around Asia for a year in 2004 teaching English led to him discovering delightful new cuisine.  He arrived back in Scotland in 2005 where he began work at First Coast restaurant in Dalry Road as Head Chef gaining a Michelin listing & at the same time helping set up the Mussel & Steak Bar kitchen when we first opened.  He left after 18 months to go travelling once again, this time in Spain, where he worked in a traditional Basque restaurant in Northern Spain learning about Basque & Spanish cooking. Arriving back in Edinburgh he started working full time at the Mussel & Steak Bar where we hope you will enjoy the wonderful menu he has created.
